Yum, strawberries.  Right? Sweet Strawberries

One of my favorite fruits, strawberries are as pretty as they are tasty.  And since they come early in the growing season, they are a delight to pick fresh from the garden before much of anything (except greens) are ready.

Several years ago we planted a large strawberry bed – and we’ve been enjoying the bounty ever since.  One of the great things about growing your own is that they come back year after year, and spread so thickly that there is little (if no) weeding involved.  That’s my kinda gardening!

Not only are strawberries delicious, they are also very nutritious:

One cup of strawberries will give you:

  • 43 calories
  • 13% of your daily fiber (helps your digestion, keeps you full)
  • 136% daily Vitamin C (helps with a healthy immune system and also may help ward off age-related eye issues)
  • 21% of manganese (another powerful anti-inflammatory – helps lesson cellular inflammation)

Plus, thanks to all these antioxidants and vitamins, strawberries are great for your bones, work to inhibit the enzyme COX similar to how aspirin and ibuprofen work.  So much power in such a fun little fruit!

Interested in new ways to enjoy strawberries?  I’ll share several new recipes this month, but in the meantime, here are a few favorites:
