Today I’m sharing with you my FAVORITE summer side dish.  As soon as the zucchini’s are ready from the garden, I start making this dish several times a week.  It’s easy, delicious and a perfect side to almost any meal.  What more could you want?

Grilled Zucchini Salsazucchini salsa

2-3 small zucchini

1 medium tomato (or a cup of halved cherry tomatoes works well too)

1/4 Vidalia onion, chopped

2 cloves garlic, minced

1 jalapeno, minced (optional)

sea salt

freshly cracked pepper

olive oil

Step one:  Drizzle a bit of olive oil on a piece of aluminum foil or a grill pan.  Load all the ingredients (except salt and pepper) on top.  Season with spices and mix well with your hands.

Step two:  Place on grill and roast until zucchini is slightly brown around the edges.
