If you haven’t figured it out by now, I love EASY recipes. Especially easy and delicious recipes.
Well, thanks to my daughters 4-H project this year, we have had lots of delicious zucchini from our garden. And although I love my grilled zucchini salsa, I am always open to new ways to enjoy zucchini. During open judging, I heard the judge suggest to several kids that they slice open their zucchini, put a cheese slice on top and microwave it for 3o seconds.
Although I liked that idea, I thought I could probably bump up the flavor a bit. So this is MY version:
Cheesy Zucchini Bake
2 small to medium zucchini (the fresher the better)
2-4 ounces sharp cheddar cheese
Step one: Preheat oven to 350. Slice each zucchini in half and place on a baking sheet. Cover with an ounce or two of cheese. Drizzle with olive oil, salt and pepper.
Step two: Bake 15 minutes or until zucchini is soft and cheese is melted but not burned.
Enjoy! This makes a terrific side dish or even a yummy light lunch. I cut one of the halves into small bite sized pieces and my son gobbles it up – which is fantastic because I haven’t gotten him to eat zucchini any other way yet!
