Did you try the Kale Chips last week?  Although we love those, THIS recipe is our all time favorite way to enjoy kale.  In fact, it’s so yummy that my daughter (a self-proclaimed kale hater) will happily eat two servings of this salad.Dinosaur slaw

Need a healthy side dish?  Make this.  Asked to bring a salad to a get-together?  Bring this one (and be prepared to share the recipe).

Ready for a simple, delicious, super healthy salad?

Best Kale salad ever

1 bunch kale

3 cloves garlic

1/4 cup extra virgin olive oil

2 T balsamic vinegar

freshly grated parmesan

sea salt, black pepper

Step one:  remove the kale leaves from the stem (throw stem away), chop into thin ribbons and then place in a bowl and massage with your hands for a few minutes – this makes the kale easier to digest

Step two:  place the garlic in a small pan, cover with olive oil and heat at medium heat until garlic gets fragrant

Step three:  while garlic is warming up, sprinkle some Parmesan over the kale (few tablespoons), mix well

Step four:  before garlic burns, take it off the heat and add the vinegar.  Stir and then pour over kale.  Sprinkle some more Parmesan on kale, season with sea salt and pepper and mix well.

Give this one a try – it is so tasty and so easy, you’ll be glad you gave it a shot.  If you can’t get your hands on fresh kale, you can use spinach for this recipe too, but the peppery kale is really a better choice with this dressing.  I especially love to serve this with homemade pizza – it’s a great side dish.
