Looking for something different for dinner this week?  How about this quick and easy Greek inspired meal?  It’s very flexible and comes together quickly!

Greek Inspired Dinnerfresh pitas

1/2 to 1 pound meat (steak, chicken, lamb or pork all work well)

cucumbers

fresh tomatoes

red onion

pita bread

The Sauce to Bring it all together:

1 cup plain greek yogurt

1 garlic clove, chopped

1 T. fresh chives (or dill would be great)

squeeze of fresh lemon juice

1/2 t. cumin

1/2 t. oregano

sea salt

Step one:  Mix together ingredients for sauce and set aside.

Step two:  Grill meat, while meat is grilling slice tomatoes, cucumbers and red onion.  Set on a pretty plate or platter with feta.  Adding hummus or kalamata olives would be nice too!  Or even sun-dried tomatoes.

Step three:  Let meat rest for 5 minutes, then slice.  Serve with platter of toppings, sauce and pita.  Let everyone make their own dinner!

This is a great dinner for picky eaters.  My kids like this meal in parts.  They eat the meat alone, dip the veggies in the sauce and dip the pita in hummus.  I like to load it all up into a messy sandwich!  Veggie lovers can eat more veggies, meat lovers less.  Very versatile!
