I love to entertain – and especially spur of the moment! Then I don’t have time to worry about how the house looks or what to serve. Lucky for me, this happens to us almost weekly. I’ve had to get pretty good at putting together a little something to snack on in a matter of minutes when we have friends stop by unexpectedly.
This one is my favorite (and most flexible) last-minute entertaining options – add a nice bottle of wine and you can sit and visit with your friends instead of slaving away in the kitchen. Just like the last few weeks (after school formula and school lunch formula) this one is more of a guideline than an actual recipe.
2- 3 types of cheese (one white, one flavored and one other)
crackers, grilled polenta, crostini or bread
something savory (pickles, olives, tapenade)
veggies (cucumbers, sliced or sun-dried tomatoes are my standbys – even guacamole or salsa would work in a pinch)
Simply arrange the ingredients on a plate (or two) and enjoy – everyone has fun putting together different combinations or bites of food, there is typically something everyone likes, and you can easily have all the ingredients on hand. Just pick up a new type of cheese each week when you grocery shop, and keep some crackers and something savory in your pantry and you’ll be ready at a moment’s notice for guests.
This is also nice to have up your sleeve when you need a quick and easy dinner – the pictures are actually from our dinner last week when I left the roast in the oven too long and had to throw it out!
