Menu Planning keeps me sane!  Honestly, if I didn’t plan a weekly menu, we’d probably eat pasta or go out to dinner every night.  But, thanks to menu planning, I always have ingredients on hand for a variety of healthy, delicious dinners!

Week of March 3 – 9green beans

Monday – Pork  roast with verde sauce and veggie couscous

Tuesday  – salmon, green beans, rice

Wednesday – pork stew

Thursday – Chicken with quinoa

Friday – steak and mushrooms, roasted cauliflower

Saturday – date night

Sunday – out as a family

I’m also going to make a batch of pumpkin muffins for breakfast and snacks, and cut up a bunch of veggies for snacking – on the list for today!
