We LOVE guacamole in our house (otherwise known as “green candy”).  In fact, we love it so much that I make it three or four times a week.  It’s a rare week we don’t have avocados on the counter ready to go.  Since Cinco de Mayo is Sunday, I figured I’d better share it!

This guacamole recipe is so simple and so delicious that I’ll often make it to enjoy with dinner, for our after school snack, lunch, heck I even make it in the condo when we travel.  Get out your ingredients and you’ll be eating it in less than five minutes.  Ready for some green candy?

Guacamole

1 ripe avocado

1 clove garlic, minced

1 T. red onion, chopped

1 lime

sea salt

freshly cracked pepper

cumin

jalapeno (optional)

Step one: Cut your avocado in half, scoop out the flesh and put in a small bowl.

Step four:  Taste and add more seasonings if you desire.

This guacamole is great on sandwiches, with veggies, on burritos, tacos, and of course, with chips!
