Want an easy meal that everyone will love?  Why not roast a chicken?  It is ridiculously simple to do and guaranteed to be a hit with the whole family.  Plus, you’ll end up with plenty of leftovers for another quick and easy meal later in the week.

Here is my foolproof method for a tender, juicy bird – hands on time is less than five minutes, but do plan for about two and a half hours total (most of it cooking time):

Step one:  Pre-heat oven to 350.  Rinse and dry your chicken.  Place in a roasting pan breast side down and drizzle a few tablespoons of olive oil or melted butter over top.  Sprinkle with sea salt and pepper.

Step two:  After one hour in the oven, flip the bird, drizzle more oil or butter on the breast side and sprinkle with sea salt and pepper.  Put back in the oven for another hour.

Step three:  Take out of the oven – check to see if done (legs should wiggle freely and juices should be clear – you can also use a thermometer to check the internal temp – should be at 165 degrees).

Kinda an ugly chicken – but hey, it’s from a local farm!

Step four:  Cover with aluminum foil and let it rest for five to ten minutes until you serve it.  Save the bones – next week I’ll share my super simple chicken stock recipe – you’ll never need to buy a can of chicken stock again!
