Once a year we order 1/2 hog and 1/4 cow from a local farmer.  It’s a great way to save money on quality meat – and I never have to worry about having meat on hand for dinner.  Until the end of the year . . . when we are out of all the cuts we use frequently.

This year, after all the spicy, Italian and breakfast sausage was gone, I was left with 5 pounds of ground pork.  Now, I could have mixed it with hamburger for spaghetti or another Italian dish – but all the hamburger is gone too!  Plus, I figured there had to be a better use.posole

Man did I find it!  Posole is traditionally made with pork shoulder, but subbing ground pork was AMAZING!!!  This dish is quite easy – lots of hands off time and it is seriously wonderful.  I get quite a bit of excitement from the family when they come home from work and school and discover it on the stove.  So, here is my version of Posole:

Posole

serves 4-6

1 pound ground pork

1/2 t. ground cumin

1/2 t. dried oregano

1 t. chipotle seasoning (critical ingredient for flavor – you could used a T of canned chipotle peppers in adobo also)

2- 14 oz. cans hominy

1 bay leaf

1 medium onion

1 garlic clove, chopped

Toppings: 3-4 T. chopped cilantro; 4-6 chopped radishes; 1/2 chopped onion; 1 small avocado, diced; 1 lime, sliced

Step one:  Brown the ground pork and then add the seasonings.  I use a dutch oven, but any sturdy large pan would work.  Cover pork with liquid from hominy.  If it’s not quite covered, add a bit of water.  Add chopped onion, then bring to a boil and simmer for an hour.

Step two:  Add hominy and simmer for another forty-five minutes to an hour.  Meanwhile, prepare your toppings and place on the table.  The toppings are critical – they take this dish from so-so to fabulous!

Step three:  Serve posole in shallow bowls and let everyone enjoy adding their own toppings!  You might consider doubling this recipe as it tastes even better the second day!

If you can swing it, this is a great dish to prepare early in the day and then just heat up for dinner – aside from the avocado, everything can easily be made ahead of time.
